Baked Sunday Pancake With Raspberry Sauce Recipe

Ingredients
  • 2 tbsps sugar
  • 1/2 tsp vanilla
  • 1/8 tsp salt
  • 3 tbsps butter
  • 3/4 c milk
  •  Raspberry sauce (recipe follows)
  • 3 large eggs
  • 1/2 c all-purpose flour

Directions
  • Step #1 Melt butter in a 10-inch ovenproof frying pan over low heat/flame.
  • Step #2 Remove from heat.
  • Step #3 In a large bowl or mixer, beat or whirl eggs until light & pale.
  • Step #4 Beat or mix in milk, vanilla, flour, sugar, & salt.
  • Step #5 Pour batter into prepared pan & bake in a 425° oven until pancake is puffed & lightly browned, 15 to 20 mins.
  • Step #6 Slice into wedges & serve as soon as possible with raspberry sauce.
  • Step #7 Raspberry sauce: In a food processor/blender or mixer, whirl 4 c rinsed fresh or thawed frozen raspberries until smooth.
  • Step #8 Rub purée through a fine strainer into a bowl; discard seeds.
  • Step #9 Stir 1/4 c sugar into raspberry purée; taste, & add more sugar if desired.
  • Step #10 Makes 1 1/4 c.
