Honey-nut Granola Recipe

Ingredients
  • 2 c sweetened flaked coconut (optional)
  • 1/4 c sesame seeds
  • 1/2 c honey
  • 2/3 c toasted wheat germ
  • 1 c butter, melted
  • 1 (18-oz.) container uncooked regular oats (about 6 c)
  • 2 1/2 c coarsely sliced pecans
  • 1/4 c firmly packed light brown sugar
  • 1/4 tsp salt
  • 2 tsps vanilla extract
  • 1 (6-oz.) package sweetened dried cranberries

Directions
  • Step #1 Stir together first 4 ingredients and, if desired, coconut In a large-ish bowl.
  • Step #2 Combine butter & next 4 ingredients in a medium bowl.
  • Step #3 Pour over oat mixture; stir until evenly coated.
  • Step #4 Divide mixture evenly between 2 lightly greased 15- x 10-inch jelly-roll pans.
  • Step #5 Position 1 oven rack about 6 inches from top heating element in oven; place a second oven rack about 6 inches from bottom heating element.
  • Step #6 Place 1 pan on each rack.
  • Step #7 Bake at 325° for 25 to 30 mins or until toasted, stirring every 10 mins & switching position of baking sheets after first 15 mins.
  • Step #8 Spread granola on wax paper to cool completely.
  • Step #9 Add dried cranberries.
  • Step #10 Store in an airtight container at about room temp up to 3 days, or freeze up to 6 months.
  • Step #11 Note: For testing purposes only, we used Ocean Spray Craisins for sweetened dried cranberries.
