Double Apple-walnut Scones Recipe

Ingredients
  • 1/2 c finely sliced dried apple
  • 1/4 c apple juice
  • 1/2 c dried currants or raisins
  • 1 c low-fat buttermilk
  • 1/4 c coarsely sliced walnuts
  • 1/4 tsp salt
  • 3 tbsps stick margarine or butter, melted & cooled
  • 2 c all-purpose flour
  • 1/4 c sugar
  •  Cooking spray
  • 1 tsp baking soda
  • 1 tbsp baking powder

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Place apple juice in a small microwave-safe bowl; microwave at HIGH for 3 mins or until juice boils.
  • Step #3 Remove from microwave.
  • Step #4 Add currants & dried apple; let this stand 15 mins.
  • Step #5 Combine the buttermilk, sugar, margarine, & apple juice mixture In a large-ish bowl.
  • Step #6 Lightly spoon flour into dry measuring c, & level with a knife.
  • Step #7 Combine the flour, baking soda, baking powder, walnuts, & salt; add to buttermilk mixture, stirring just until moist (dough will be sticky).
  • Step #8 Drop the dough into 12 rounds (about 1/4 c) onto a baking sheet coated with cooking spray.
  • Step #9 Bake at 350° for 17 mins or until golden.
  • Step #10 Place on a wire rack.
