Blueberry Turnovers Recipe

Ingredients
  •  Crust:
  •  Cooking spray
  •  Dash of salt
  • 2 tbsps (1 oz) 1/3-less-fat cream cheese
  • 1 tsp cornstarch
  • 1 large egg white, lightly beaten
  • 2/3 c blueberries
  • 1/2 c all-purpose flour
  •  Filling:
  • 1 tbsp ice water
  • 1 tsp sugar, divided
  • 1 tsp fresh lemon juice
  • 1 tsp grated lemon rind
  • 1 1/2 tbsps sugar
  • 2 tbsps sugar
  • 1 tbsp butter

Directions
  • Step #1 To prepare crust, lightly spoon flour into a dry measuring c; level with a knife.
  • Step #2 Place flour, cream cheese, butter, 2 tbsps sugar, & salt in a food processor/blender; pulse 5 times or until mixture resembles coarse meal.
  • Step #3 With processor on, add ice water through food chute, processing just until mixd (do not form a ball).
  • Step #4 Press the mixture carefully into a 3-inch circle on heavy-duty plastic wrap; cover with extra plastic wrap.
  • Step #5 Chill for 15 mins.
  • Step #6 Preheat oven to 400°.
  • Step #7 Divide dough into 4 equal portions; place each portion between 2 sheets of plastic wrap.
  • Step #8 Roll each portion into a 5-inch circle.
  • Step #9 Place dough in freezer for 5 mins or until the plastic wrap can be easily removed.
  • Step #10 To prepare filling, mix blueberries & next 4 ingredients (blueberries through juice) in a bowl.
  • Step #11 Working with 1 dough portion at a time, remove plastic wrap from dough.
  • Step #12 Place dough on a lightly floured surface, & brush with egg white.
  • Step #13 Spoon about 2 tbsps blueberry filling onto half of circle.
  • Step #14 Fold dough over filling, & press the edges together with a fork to seal.
  • Step #15 Place the turnover on a foil wrap-lined baking sheet coated with cooking spray.
  • Step #16 Lightly coat turnover with cooking spray, & sprinkle with 1/4 tsp sugar.
  • Step #17 Pierce the turnover with a fork.
  • Step #18 Repeat procedure with remaining dough, filling, egg white, & sugar.
  • Step #19 Bake at 400° for 15 mins or until lightly browned.
  • Step #20 Remove from pan, & cool on a wire rack.
  • Step #21 Note: Expect the blueberries to ooze out of the crust a little during baking.
