Merry Cranberry-nut Yeast Scones Recipe

Ingredients
  • 2 (1/4-oz) envelopes active dry yeast
  • 1/4 c warm water (100° to 110°)
  • 1/2 c sliced walnuts or pecans
  • 1 tsp baking soda
  • 1/2 c sweetened dried cranberries
  • 1 tbsp baking powder
  • 5 c all-purpose flour
  •  Jelly (optional)
  • 2 tsps salt
  • 1 c shortening
  • 2 tsps sugar
  • 2 c buttermilk
  •  Mock Devonshire Cream

Directions
  • Step #1 Stir together first 3 ingredients in a 1-c glass measuring c; let this stand 5 mins.
  • Step #2 Combine flour & next 3 ingredients In a large-ish mixing bowl; cut in shortening with a pastry mixer until crumbly.
  • Step #3 Gradually add yeast mixture & buttermilk, stirring just until dry ingredients are moistened.
  • Step #4 Stir in cranberries & sliced walnuts.
  • Step #5 Cover up & chill at least 1 hr or up to 48 hrs.
  • Step #6 Turn dough out onto a lightly floured surface; knead 3 or 4 times.
  • Step #7 Pat to 1/2-inch thickness.
  • Step #8 Cut dough with a 2-inch round cutter; place on ungreased baking sheets.
  • Step #9 Bake at 450° for 10 mins or until golden.
  • Step #10 Serve hot with Mock Devonshire Cream and, if desired, jelly.
  • Step #11 NOTE: For testing purposes only, we used Ocean Spray Craisins for sweetened dried cranberries.
