Orange Cranberry Walnut Loaf
Ingredients
2 (1/4-oz) envelopes active dry yeast
1/4 c warm water (100° to 110°)
1/2 c sliced walnuts or pecans
1 tsp baking soda
1/2 c sweetened dried cranberries
1 tbsp baking powder
5 c all-purpose flour
Jelly (optional)
2 tsps salt
1 c shortening
2 tsps sugar
2 c buttermilk
Mock Devonshire Cream
Directions
Step #1 Stir together first 3 ingredients in a 1-c glass measuring c; let this stand 5 mins.
Step #2 Combine flour & next 3 ingredients In a large-ish mixing bowl; cut in shortening with a pastry mixer until crumbly.
Step #3 Gradually add yeast mixture & buttermilk, stirring just until dry ingredients are moistened.
Step #4 Stir in cranberries & sliced walnuts.
Step #5 Cover up & chill at least 1 hr or up to 48 hrs.
Step #6 Turn dough out onto a lightly floured surface; knead 3 or 4 times.
Step #7 Pat to 1/2-inch thickness.
Step #8 Cut dough with a 2-inch round cutter; place on ungreased baking sheets.
Step #9 Bake at 450° for 10 mins or until golden.
Step #10 Serve hot with Mock Devonshire Cream and, if desired, jelly.
Step #11 NOTE: For testing purposes only, we used Ocean Spray Craisins for sweetened dried cranberries.
