Baked Rigatoni With Ricotta And Collard Greens Recipe

Ingredients
  • 1 medium onion, sliced (about 1 c)
  • 1/2 c grated Parmesan cheese
  • 1/2 tsp freshly ground black pepper
  • 1/4 c all-purpose flour
  • 1 1/2 c milk
  • 3 garlic cloves, minced
  • 1 tsp red pepper flakes
  • 2 tsps sugar
  • 1 (16-oz) package rigatoni or penne pasta
  • 2 tsps salt
  • 1 c shredded mozzarella
  • 1 lb collard greens, washed, drained, & sliced
  • 1 c ricotta cheese
  • 1/4 c butter

Directions
  • Step #1 Prepare pasta according to directions.
  • Step #2 Drain & set aside.
  • Step #3 Preheat oven to 350°.
  • Step #4 Lightly grease a 13- x 9-inch baking dish.
  • Step #5 Heat butter in a Dutch oven over medium-high heat; sauté onion 5 mins or until just brown.
  • Step #6 Add garlic, & cook about 1 min.
  • Step #7 Reduce heat to medium-low, & add greens; cover & cook 15 to 20 mins or until greens are tender, stirring every once in awhile.
  • Step #8 Sprinkle top greens with flour.
  • Step #9 Cook uncovered, stirring constantly, 1 min.
  • Step #10 Gradually add milk, stirring well.
  • Step #11 Cook 5 mins, stirring often, until thickened & smooth.
  • Step #12 Remove from heat; stir in the cooked pasta, mozzarella, & next 5 ingredients.
  • Step #13 Place into prepared dish, & sprinkle evenly with Parmesan.
  • Step #14 Bake at 350° for 15 to 20 mins.
