Holiday Quiche Recipe

Ingredients
  • 1 c uncooked gourmet brown rice mix (such as Lundberg Jubilee or Countrywild)
  • 3/4 c whole-berry cranberry sauce
  • 3 eggs
  • 2/3 c evaporated skimmed milk
  • 1 egg
  • 2 tsps minced fresh or 1/2 tsp rubbed sage, divided
  • 2 tbsps dried cranberries
  •  Sage sprigs (optional)
  • 1/2 c grated Parmesan cheese
  • 1/2 c grated Parmesan cheese
  • 1 c sliced cooked turkey
  • 1/4 tsp black pepper
  • 2 c water
  • 1/8 tsp white pepper
  • 1/2 tsp salt
  •  Vegetable cooking spray
  • 2 c cubed peeled cooked butternut squash, divided

Directions
  • Step #1 Combine rice & water in a medium saucepan; bring to a boil.
  • Step #2 Cover up, reduce heat, & let simmer 45 mins or until liquid is absorbed.
  • Step #3 Let stand, covered, 10 mins.
  • Step #4 Fluff with a fork.
  • Step #5 Combine cooked rice, salt, 1 egg, 1/2 c cheese, & black pepper in a bowl; stir well.
  • Step #6 Press into a 10-inch pie plate coated with cooking spray, & bake this at 350° for 12 mins.
  • Step #7 Spoon 1 c squash, turkey, & half of sage into prepared crust.
  • Step #8 Combine the remaining squash, & white pepper in a mixer; process until smooth, milk, 3 eggs, & pour this into crust.
  • Step #9 Combine remaining sage, 1/2 c cheese, & dried cranberries; sprinkle it over quiche.
  • Step #10 Bake at 350° for 40 mins or until a knife inserted near center comes out clean.
  • Step #11 Let stand 10 mins before serving.
  • Step #12 Serve with cranberry sauce, & garnish with sage sprigs, if desired.
