Cornish Hen Soup Recipe

Ingredients
  • 1 onion, sliced
  • 1 Rock Cornish hens
  • 1 (48 fluid oz) can chicken broth
  • 6 cloves garlic, minced
  • 3 large carrots, sliced
  • 3 potatoes, peeled & cubed
  • 5 stalks celery, sliced
  • 2 tbsps vegetable oil

Directions
  • Step #1 Remove the gizzards, & wash the hen thoroughly.
  • Step #2 Cut hen into several pieces.
  • Step #3 Heat oil in a large pot.
  • Step #4 Add hen pieces, & brown on all sides.
  • Step #5 Add carrots, garlic, onions, celery, & potatoes; cook this until onion is tender.
  • Step #6 Pour in chicken broth.
  • Step #7 Use more or less broth to your taste, but make sure to cover all the ingredients in the pot.
  • Step #8 Bring to a boil, & then reduce heat.
  • Step #9 Simmer until vegetables are tender & hen is cooked through.
  • Step #10 Remove hen from pot, & remove meat from the bones.
  • Step #11 Discard bones.
  • Step #12 & return meat to soup.
  • Step #13 Serve.
