Toasty Baked Oatmeal Recipe

Ingredients
  • 2 c regular rolled oats
  • 1/2 c firmly packed brown sugar
  • 1 1/2 c milk
  • 1 firm-ripe pear (8 oz.), rinsed, stemmed, cored, & sliced into 1/4-inch pieces
  • 1/2 tsp salt
  • 3 tbsps vegetable oil
  • 1/2 tsp ground cinnamon
  • 1 1/2 tsps baking powder
  • 2 large eggs
  • 1/3 c sliced dried apricots
  • 1/3 c sliced almonds

Directions
  • Step #1 Preheat oven to 325°.
  • Step #2 In a large bowl, baking powder, mix oats, & salt.
  • Step #3 Stir in almonds, apricots, & pear.
  • Step #4 In another bowl, brown sugar, whisk together the milk, oil, eggs, & cinnamon.
  • Step #5 Pour over the oat mixture & stir this to mix.
  • Step #6 Pour mixture into a buttered 8-inch square baking pan.
  • Step #7 Bake until liquid is absorbed & top is light golden, about 45 mins.
  • Step #8 Spoon into bowls & serve warm.
