Wild Rice, Asparagus, And Goat Cheese Frittata Recipe

Ingredients
  • 1 c (1-inch) slices asparagus (about 1/4 lb)
  • 2 tbsps water
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 c thinly sliced green onions
  • 1/4 c thinly sliced fresh basil
  • 4 large egg whites
  • 1/4 c (1 oz) crumbled goat cheese
  • 1/2 c cooked wild rice
  • 1 tsp grated lemon rind
  • 1/2 c halved grape tomatoes
  •  Cooking spray
  • 5 large eggs

Directions
  • Step #1 Preheat broiler.
  • Step #2 Combine first 5 ingredients, stirring well with a whisk; set aside.
  • Step #3 Heat a large nonstick skillet over medium-high heat.
  • Step #4 Coat pan with cooking spray.
  • Step #5 Add asparagus & garlic, & sauté 2 mins.
  • Step #6 Add onions, & sauté 1 min or until asparagus is crisp-tender.
  • Step #7 Add tomatoes, basil, rice, & rind; cook 1 min or until thoroughly heated.
  • Step #8 Reduce heat to medium.
  • Step #9 Pat mixture into an even layer in pan; sprinkle with cheese.
  • Step #10 Pour egg mixture over rice mixture; cook 4 mins or until almost set.
  • Step #11 Wrap handle of pan with foil wrap; broil 4 mins or until golden brown & set.
