Whole Wheat Apple Scones Recipe

Ingredients
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 c plus 2 tbsps all-purpose flour (about 5 oz)
  • 1/2 c 1% low-fat milk
  • 1/4 c sugar
  • 2 tbsps 1% low-fat milk
  • 2 tsps sugar
  • 1/2 tsp salt
  • 1/4 c chilled butter, cut into small pieces
  • 1 c whole wheat flour (about 4 3/4 oz)
  •  Cooking spray
  • 1 c shredded peeled Granny Smith apple (about 1/2 lb)
  • 2 tsps baking powder
  • 1 tsp vanilla extract
  •  Dash of ground nutmeg

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Lightly spoon flours into dry measuring c & tbsps; level with a knife.
  • Step #3 Combine flours, 1/4 c sugar, & next 5 ingredients (through nutmeg) In a large-ish bowl; stir with a whisk.
  • Step #4 Cut in butter with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #5 Add apple, & vanilla extract, 1/2 c milk, stirring just until moist (dough will be sticky).
  • Step #6 Turn dough out onto a lightly floured surface, & knead lightly 4 times with floured hands.
  • Step #7 Divide dough in half; pat each portion into a 6-inch circle on a baking sheet coated with cooking spray.
  • Step #8 Cut each circle into 5 wedges, cutting into but not through, dough.
  • Step #9 Brush tops of wedges with 2 tbsps milk, & sprinkle evenly with 2 tsps sugar.
  • Step #10 Bake at 425° for 15 mins or until golden.
  • Step #11 Serve warm.
