Tomato Goat Cheese Strata Recipe

Ingredients
  • 2 c thinly sliced onion
  • 1 c 2% reduced-fat milk
  • 2 garlic cloves, sliced
  • 3 large eggs
  • 5 large egg whites
  • 1 tbsp sliced fresh sage
  • 1 (28-oz) can sliced tomatoes with basil, garlic, & oregano, undrained
  • 3 tbsps sliced fresh parsley
  • 1/2 tsp crushed red pepper
  • 8 c (1-inch) cubed sourdough bread (about 8 oz)
  • 3/4 c (3 oz) crumbled goat cheese
  • 2 tsps olive oil

Directions
  • Step #1 Preheat oven to 450°.
  • Step #2 Combine first 4 ingredients in a bowl, stirring well with a whisk.
  • Step #3 Heat oil In a large-ish cast-iron or oven-proof skillet over high heat.
  • Step #4 Add onion; sauté 2 mins.
  • Step #5 Add sage & garlic; sauté 1 min.
  • Step #6 Add pepper & tomatoes, stirring well.
  • Step #7 Bring to a boil; cook 1 min.
  • Step #8 Stir bread into tomato mixture; top this with cheese.
  • Step #9 Pour egg mixture over tomato mixture (pan will be very full).
  • Step #10 Carefully place pan in oven; bake this at 450° for 25 mins or until egg is set.
  • Step #11 Let stand 5 mins.
  • Step #12 Cut into 4 wedges.
