Chicken And Wild Rice Casserole Recipe

Ingredients
  • 3 lbs bone-in chicken breast halves, with skin
  • 1 c sliced celery
  • 1 1/2 tsps salt
  • 1 tsp curry powder
  • 1 c dry white wine
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 onion, sliced
  • 1 (16 oz) can sliced mushrooms, drained
  • 1 c sour cream
  • 2 (6 oz) packages long grain & wild rice mix
  • 1 c water

Directions
  • Step #1 Place chicken breasts in a large pot with water, salt, curry powder, wine, onion, & celery.
  • Step #2 Cover, & bring to a boil.
  • Step #3 Reduce heat to low, & let simmer for 1 hr.
  • Step #4 Remove from heat, strain (reserving broth), & put in the fridge to cool.
  • Step #5 Remove chicken meat from bone, & cut into bite size pieces.
  • Step #6 Prepare the rice mix according to package directions.
  • Step #7 Replace the specified amount of liquid with the same amount of the reserved broth.
  • Step #8 Preheat oven to 350 degrees F (175 degrees C).
  • Step #9 Lightly grease a 9x13 inch baking dish.
  • Step #10 In a large bowl mix the chicken, rice, & mushrooms.
  • Step #11 Blend in the sour cream & soup.
  • Step #12 Spoon into the prepared baking dish.
  • Step #13 Bake at 350 degrees F (175 degrees C) for 1 hr.
