Southwest Eggs Benedict Recipe

Ingredients
  • 1/4 c vegetable oil
  •  Chipotle Hollandaise Sauce
  • 1 c (4 oz.) shredded Monterey Jack cheese with peppers
  • 1 c salsa
  •  Garnish: fresh cilantro sprigs
  • 8 (5-inch) fajita-size corn tortillas
  • 1/2 tsp white vinegar
  • 8 large eggs

Directions
  • Step #1 Fry tortillas, in batches, in hot oil in a medium skillet 1 to 2 mins on each side or until crisp.
  • Step #2 Top each tortilla evenly with shredded cheese.
  • Step #3 Keep warm.
  • Step #4 Add water to a depth of 3 inches to a large Dutch oven.
  • Step #5 Bring to a boil; reduce heat, & maintain a light simmer.
  • Step #6 Add vinegar.
  • Step #7 Break 4 eggs, & slip into water, 1 at a time, as close as possible to surface.
  • Step #8 Simmer 3 to 5 mins or to desired degree of doneness.
  • Step #9 Remove with a slotted spoon.
  • Step #10 Trim edges, if desired.
  • Step #11 Repeat procedure with remaining 4 eggs.
  • Step #12 Top each warm tortilla with a poached egg, Chipotle Hollandaise Sauce, & 2 Tbsp.
  • Step #13 salsa.
  • Step #14 Garnish, if desired.
  • Step #15 Serve as soon as possible.
