Cardamom Rolls Recipe

Ingredients
  • 1/2 c packed light brown sugar
  • 4 tsps ground cardamom
  • 1/2 c granulated sugar
  • 3/4 c milk
  • 2 packages active dry yeast
  • 4 1/2 c flour, plus more for kneading
  • 1 c unsalted butter, plus more for buttering pans
  • 2 large eggs
  • 3/4 c powdered sugar
  • 1 tsp salt

Directions
  • Step #1 In a large bowl, dissolve yeast in 1/2 c warm water (about 110°).
  • Step #2 Let sit until foamy bubbles form on surface, about 5 mins.
  • Step #3 Meanwhile, melt 1/2 c butter in a pan over low heat/flame & let cool just until warm.
  • Step #4 Let remaining 1/2 c butter soften in a warm place until spreadable.
  • Step #5 To the yeast, 4 1/2 c flour, eggs, add melted butter, 1/2 c milk, granulated sugar, & salt.
  • Step #6 Stir or mix in a standing mixer with a dough hook until smooth, 5 mins.
  • Step #7 Cover up & let rise in a warm place until doubled in bulk, about 1 hr.
  • Step #8 Butter two 9-in.
  • Step #9 cake pans.
  • Step #10 When dough has doubled, punch it down & turn it out onto a lightly floured surface.
  • Step #11 Roll dough into a 2-ft.
  • Step #12 square, spread with softened butter, & sprinkle with brown sugar & cardamom.
  • Step #13 Roll dough into a log, pinching the seam to seal.
  • Step #14 Cut log into 16 pieces & arrange, cut sides up, in a single layer in cake pans.
  • Step #15 Cover up with plastic wrap & chill overnight.
  • Step #16 Preheat oven to 350°.
  • Step #17 Remove plastic wrap from rolls & bake this until golden brown & a toothpick inserted in the center comes out clean, about 30 mins.
  • Step #18 Let cool in pan 10 mins.
  • Step #19 Meanwhile, make glaze: Whisk together 1/4 c milk & 1/2 c powdered sugar in a small bowl.
  • Step #20 Remove rolls from pans & drizzle with half of this thin glaze.
  • Step #21 Add remaining 1/4 c powdered sugar to remaining glaze & drizzle over rolls.
  • Step #22 Serve warm.
