Gallo Pinto (beans And Rice) Recipe

Ingredients
  • 1/4 tsp pepper
  • 1/4 tsp salt
  •  Bottled Pickapeppa sauce
  • 3/4 c sliced red bell pepper
  • 1 (15-oz) can black beans, drained
  • 3 bay leaves
  •  Tangy Tamarind Sauce
  • 1/2 tsp ground cumin
  • 3/4 c sliced yellow bell pepper
  • 1/3 c sliced fresh cilantro
  • 2 garlic cloves, sliced
  • 1 c uncooked long-grain parboiled rice
  • 2 c water
  • 1 c sliced sweet onion
  • 1 tbsp vegetable oil
  • 1/4 tsp salt

Directions
  • Step #1 Combine the first 3 ingredients in a medium saucepan, & bring to a boil.
  • Step #2 Stir in the rice.
  • Step #3 Cover up, reduce heat, & let simmer 20 mins or until liquid is absorbed.
  • Step #4 Discard the bay leaves.
  • Step #5 Set rice aside.
  • Step #6 Heat oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #7 Add onion & next 6 ingredients (onion through garlic); sauté 5 mins or until tender.
  • Step #8 Add rice, cilantro, & beans, & cook 3 mins or until thoroughly heated, stirring every once in awhile.
  • Step #9 Serve with Tangy Tamarind Sauce or Pickapeppa sauce.
