Fresh Cranberry Muffins Recipe

Ingredients
  • 1/2 tsp vanilla extract
  • 2/3 c 2% reduced-fat milk
  • 1 tsp grated orange rind
  • 2 tsps baking powder
  • 1/4 c butter or stick margarine, melted
  • 2 c all-purpose flour
  • 1 large egg, lightly beaten
  • 1 c sliced fresh cranberries
  •  Cooking spray
  • 1/4 tsp salt
  • 2/3 c sugar

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour, sugar, baking powder, & salt In a large-ish bowl; stir well with a whisk.
  • Step #4 Stir in cranberries; make a well in center of mixture.
  • Step #5 Combine milk, vanilla, butter, rind, & egg; add to flour mixture, stirring just until moist.
  • Step #6 Spoon batter into 12 muffin c coated with cooking spray.
  • Step #7 Bake at 400° for 18 mins or until muffins spring back when touched lightly in center.
  • Step #8 Remove muffins from pan as soon as possible; place on a wire rack.
  • Step #9 Note: These muffins freeze well.
  • Step #10 Bake them ahead, cool completely, & store this in freezer bags.
  • Step #11 To serve, thaw at about room temp.
  • Step #12 Reheat in aluminum foil wrap at 300º for 10 to 15 mins or until thoroughly heated.
