Sour Cream Coffee Cake Recipe

Ingredients
  • 1/4 c sliced walnuts
  • 1/4 c butter, softened
  • 1/2 c packed brown sugar
  • 2 tsps ground cinnamon
  • 1 c granulated sugar
  • 1 tsp baking soda
  •  Cooking spray
  • 1 c reduced-fat sour cream
  • 1 tsp baking powder
  • 1 3/4 c all-purpose flour
  • 2 large egg whites
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 3 ingredients; set aside.
  • Step #3 Place granulated sugar & butter In a large-ish bowl; beat with a mixer at medium speed until well-mixed (about 5 mins).
  • Step #4 Add egg whites, 1 at a time, beating well after each addition.
  • Step #5 Beat in sour cream & vanilla.
  • Step #6 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #7 Combine flour, baking powder, & salt, baking soda, stirring well with a whisk.
  • Step #8 Gradually add flour mixture to sugar mixture; beat well.
  • Step #9 Spread half of batter into an 8-inch square baking pan coated with cooking spray.
  • Step #10 Sprinkle top half of walnut streusel over batter.
  • Step #11 Spread remaining batter over streusel.
  • Step #12 Top with remaining streusel.
  • Step #13 Bake at 350° for 45 mins or until a wooden pick inserted in center comes out clean.
  • Step #14 Cool the cake on a wire rack.
