Egg, Mushroom, And Roasted Red-pepper Burritos Recipe

Ingredients
  • 1/2 c sliced bottled roasted red bell peppers
  • 3 large egg whites
  • 1 1/2 c sliced mushrooms
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 tsp butter or stick margarine
  • 1/2 c bottled salsa
  • 1/4 c (1 oz) sliced sharp cheddar cheese
  • 4 (8-inch) flour tortillas

Directions
  • Step #1 Combine first 3 ingredients in a bowl.
  • Step #2 Melt butter In a large-ish nonstick skillet over med-heat/flame.
  • Step #3 Add mushrooms; sauté 10 mins.
  • Step #4 Add peppers; sauté 1 min.
  • Step #5 Pour egg mixture into pan; cook this until bottom begins to set, stirring to scramble.
  • Step #6 Remove from heat; stir in the cheese.
  • Step #7 Warm tortillas according to package directions.
  • Step #8 Spoon one-fourth of egg mixture down center of each tortilla; roll up.
  • Step #9 Serve with salsa.
