Huevos Rancheros Recipe

Ingredients
  • 1 ripe avocado, sliced
  • 4 6-to 8-inch soft corn tortillas
  • 1/2 c mild salsa
  • 2/3 c shredded Monterey Jack cheese
  • 1 chipotle chili in adobo sauce, sliced; or 1/2 tsp crushed red pepper flakes (optional)
  • 1 16-oz can black beans, rinsed & drained
  • 1/2 tsp ground cumin
  • 4 large eggs, fried

Directions
  • Step #1 Heat oven to 425° F.
  • Step #2 Put the tortillas on a baking sheet & place this in the oven to warm.
  • Step #3 (Cover up with foil wrap if you don't like crisp tortillas.
  • Step #4 ) Toast the cumin in a small, dry saucepan over med-heat/flame until aromatic, about 3 mins.
  • Step #5 Add the beans & chipotle or crushed red pepper (if using).
  • Step #6 Remove the tortillas from the oven.
  • Step #7 Spoon some beans onto each tortilla, 1 fried egg, then top each with some salsa, & some cheese.
  • Step #8 Bake until the cheese has melted.
  • Step #9 Serve with the avocado.
