Almond-crusted French Toast Recipe

Ingredients
  • 6 (1.5-oz) slices whole wheat or whole-grain bread (such as Earth Grains)
  • 2 large egg whites
  •  Cooking spray
  • 1 tbsp maple syrup
  • 1 tsp butter, divided
  • 1/4 c sliced almonds
  • 1/2 tsp vanilla extract
  • 1 c vanilla soy milk (such as Silk)
  • 1/2 c egg substitute
  • 1 1/2 tsps sifted powdered sugar
  • 1/3 c ground flaxseed
  • 1/2 tsp ground cinnamon

Directions
  • Step #1 Combine flaxseed & sliced almonds in a shallow dish.
  • Step #2 Combine milk & next 5 ingredients (through egg whites) in a medium bowl, stirring well with a whisk, & pour milk mixture into another shallow dish.
  • Step #3 Working with 1 bread slice at a time, place bread slice into milk mixture, turning to coat both sides.
  • Step #4 Let bread stand in milk mixture 2 to 3 mins.
  • Step #5 Remove bread slice from milk mixture; dredge 1 side of bread in flaxseed mixture, pressing carefully to adhere.
  • Step #6 Repeat procedure with remaining bread slices, milk mixture, & flaxseed mixture.
  • Step #7 Heat a large nonstick skillet over med-heat/flame.
  • Step #8 Coat pan with cooking spray.
  • Step #9 Melt 1/2 tsp butter in pan; swirl to coat bottom of pan.
  • Step #10 Add 3 coated bread slices, coated sides down; cook 2 mins on each side or until lightly browned.
  • Step #11 Repeat procedure with cooking spray, remaining butter, & remaining coated bread slices.
  • Step #12 Sprinkle top powdered sugar evenly over toast.
