Plum-streusel Kuchen Recipe

Ingredients
  • 1/3 c sugar
  •  Cooking spray
  • 3/4 tsp grated lemon rind
  • 2 tsps light-colored corn syrup
  • 2 tbsps water
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 large egg
  • 1 tsp baking powder
  • 2 c sliced plums (about 3/4 lb)
  • 1 1/2 tsps vanilla extract
  • 1 tbsp vegetable oil
  • 1 2/3 c all-purpose flour, divided
  • 1/2 c plain fat-free yogurt
  • 1/4 c chilled stick margarine or butter, cut into small pieces
  • 1/2 c sugar

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Place 1/3 c flour, 1/2 c sugar, & ground cinnamon in a food processor/blender, & pulse the mixture 2 to 3 times.
  • Step #4 With processor on, slowly add the oil & corn syrup through food chute, processing until the mixture resembles coarse meal.
  • Step #5 Remove the streusel mixture from the food processor/blender, & set aside.
  • Step #6 Place 1 1/3 c flour, & salt in a food processor/blender, baking powder, 1/3 c sugar, & pulse mixture 2 to 3 times.
  • Step #7 Add the margarine, & process until mixture resembles coarse meal.
  • Step #8 Place margarine mixture In a large-ish bowl.
  • Step #9 Combine yogurt, rind, vanilla, water, & egg, & stir with a whisk.
  • Step #10 Stir yogurt mixture into margarine mixture In a large-ish bowl until mixed.
  • Step #11 Spoon batter into a 9-inch round cake pan coated with cooking spray.
  • Step #12 Sprinkle top half of streusel mixture evenly over batter.
  • Step #13 Top with plums, arranging in a circular pattern.
  • Step #14 Sprinkle top the remaining streusel mixture evenly over the plums.
  • Step #15 Bake kuchen at 400° for 45 mins or until a wooden pick inserted in center comes out clean.
  • Step #16 Cool on a wire rack.
