Morning Glory Muffins Recipe

Ingredients
  • 1 c plain fat-free yogurt
  • 3/4 c sliced walnuts
  • 1/2 c all-purpose flour (about 2 1/4 oz)
  •  Cooking spray
  • 2 tsps baking soda
  • 3 tbsps ground flaxseed (about 2 tbsps whole)
  • 1 c regular oats
  • 1 c mashed ripe banana (about 2)
  • 1 large egg
  • 3/4 c packed brown sugar
  • 1/2 c sliced dried pineapple
  • 1/4 tsp salt
  • 1 c whole wheat flour (about 4 3/4 oz)
  • 1 c sliced pitted dates
  • 1 tbsp wheat bran

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Place 18 muffin c liners in muffin c; coat liners with cooking spray.
  • Step #3 Lightly spoon flours into dry measuring c, & level with a knife.
  • Step #4 Combine flours & next 5 ingredients (through salt) In a large-ish bowl; stir with a whisk.
  • Step #5 Make a well in center of mixture.
  • Step #6 Combine yogurt, & egg; add to flour mixture, banana, stirring just until moist.
  • Step #7 Fold in dates, walnuts, & pineapple.
  • Step #8 Spoon batter into prepared muffin c.
  • Step #9 Sprinkle top evenly with flaxseed.
  • Step #10 Bake at 350° for 20 mins or until muffins spring back when touched lightly in center.
  • Step #11 Remove muffins from pans as soon as possible; cool on a wire rack.
