Orange-pecan French Toast Casserole Recipe

Ingredients
  • 3 large egg whites
  • 1/2 c fat-free milk
  • 12 (1-inch-thick) slices French bread (about 1 lb)
  • 2 tbsps light-colored corn syrup
  • 2 large eggs
  • 1 tsp ground cinnamon
  •  Cooking spray
  • 1 tsp grated orange rind
  • 1 tsp vanilla extract
  • 1 c packed brown sugar
  • 1/3 c butter, melted
  • 1/3 c sliced pecans
  • 3 tbsps granulated sugar
  • 1 c fresh orange juice

Directions
  • Step #1 Combine brown sugar, butter, & corn syrup; pour this into a 13 x 9-inch baking dish coated with cooking spray.
  • Step #2 Sprinkle top sliced pecans evenly over sugar mixture.
  • Step #3 Combine rind & next 7 ingredients (rind through eggs); stir with a whisk.
  • Step #4 Arrange bread slices over pecans in dish; pour egg mixture over bread.
  • Step #5 Cover up & put in the fridge 1 hr or up to overnight.
  • Step #6 Preheat oven to 350°.
  • Step #7 Carefully turn bread slices over to absorb excess egg mixture.
  • Step #8 Let stand at about room temp 20 mins.
  • Step #9 Bake at 350° for 35 mins or until lightly browned.
