Oyster Frittata Recipe

Ingredients
  • 1/2 c finely sliced onion
  • 1 c fresh or frozen corn kernels (about 2 ears)
  • 1/4 c sliced green bell pepper
  • 3 (8-oz) cartons egg substitute
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tsps olive oil
  • 1/4 c sliced yellow bell pepper
  • 1/4 c 1% low-fat milk
  • 1/4 c sliced red bell pepper
  • 1/4 tsp hot sauce
  • 12 shucked oysters
  • 2 tbsps sliced seeded jalapeño pepper
  • 1/4 c sliced fennel bulb, divided
  • 1/4 c (1 oz) grated fresh Parmesan cheese

Directions
  • Step #1 Preheat broiler.
  • Step #2 Add water to a small saucepan, filling two-thirds full.
  • Step #3 Bring to a boil; reduce heat, & let simmer.
  • Step #4 Add oysters, & cook 1 min or until edges of oysters curl.
  • Step #5 Drain.
  • Step #6 Place the oysters in a small bowl; sprinkle with hot sauce.
  • Step #7 Combine egg substitute, milk, salt, & black pepper in a medium bowl; stir well with a whisk.
  • Step #8 Heat oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #9 Add the corn, onion, bell peppers, 2 tbsps fennel, & jalapeño; cook for 3 mins, stirring frequently.
  • Step #10 Add oysters, & sauté 1 min.
  • Step #11 Add egg mixture; cook 4 mins or until almost set.
  • Step #12 Combine 2 tbsps fennel & cheese.
  • Step #13 Wrap handle of skillet with foil wrap; broil 1 min.
  • Step #14 Top with cheese mixture; broil for 1 min or until cheese melts.
  • Step #15 Serve warm.
