Cranberry Quick Bread With Raisins And Hazelnuts Recipe

Ingredients
  •  Cooking spray
  • 1 tsp baking powder
  • 1/3 c golden raisins
  • 1 c sugar
  • 1 large egg
  • 3 tbsps vegetable oil
  • 1/2 tsp baking soda
  • 1 1/3 c all-purpose flour
  • 3/4 c apple juice
  • 1/4 tsp salt
  • 1 1/3 c sliced fresh cranberries
  • 1/4 c sliced hazelnuts
  • 1 tsp grated orange rind
  • 2/3 c whole wheat flour

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #3 Combine flours & next 4 ingredients (flours through salt) In a large-ish bowl; make a well in center of mixture.
  • Step #4 Combine juice, rind, & egg; add to flour mixture, oil, stirring just until moist.
  • Step #5 Fold in cranberries, raisins, & hazelnuts.
  • Step #6 Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray.
  • Step #7 Bake at 350° for 50 mins or until a wooden pick inserted in center comes out clean.
  • Step #8 Cool 10 mins in pan on a wire rack; remove this from pan.
  • Step #9 Cool completely on wire rack.
