Crab And Swiss Omelet Recipe

Ingredients
  • 2 tbsps butter
  • 4 eggs, separated
  • 1 c cooked crabmeat
  • 1/2 c sliced fresh mushrooms
  • 2 tbsps milk
  • 1 c shredded Swiss cheese

Directions
  • Step #1 Melt butter in a large nonstick skillet over medium-high heat.
  • Step #2 Stir in mushrooms, & cook this until tender, about 5 mins.
  • Step #3 Using a slotted spoon, transfer mushrooms to plate.
  • Step #4 Remove skillet from heat.
  • Step #5 In a small bowl, beat egg yolks & milk to mix.
  • Step #6 In a separate bowl, beat egg whites with a dry beater until soft peaks form.
  • Step #7 Fold yolk mixture into whites.
  • Step #8 Return skillet to medium-high heat.
  • Step #9 When butter sizzles, pour egg mixture into skillet.
  • Step #10 Sprinkle top mushrooms & crab meat evenly over the top.
  • Step #11 Cook until omelet begins to set, about 3 mins.
  • Step #12 Sprinkle top with Swiss cheese.
  • Step #13 Using a large spatula, fold omelet over, forming semicircle.
  • Step #14 Cover skillet; cook this until omelet puffs & is cooked through, about 3 mins.
  • Step #15 Slide omelet onto large plate.
