Pumpkin-molasses Muffins Recipe

Ingredients
  • 1 tbsp baking soda
  • 3/4 tsp ground ginger
  • 3/4 c firmly packed brown sugar
  • 1/4 c sliced pecans
  • 1 3/4 c all-purpose flour
  • 1 c canned pumpkin
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 c butter or margarine, softened
  • 1/4 c molasses

Directions
  • Step #1 Beat butter at medium speed of an electric mixer until creamy; slowly add brown sugar, beating well.
  • Step #2 Add egg, beating well.
  • Step #3 Add pumpkin & molasses, beating well.
  • Step #4 Combine flour & next 3 ingredients; slowly add to pumpkin mixture, beating at medium-low just until mixed.
  • Step #5 Stir in pecans.
  • Step #6 Spoon into greased muffin pans, filling three-fourths full.
  • Step #7 Bake at 375° for 20 mins.
  • Step #8 Remove from pans as soon as possible.
