Pain Perdu Recipe

Ingredients
  • 1 c fresh blackberries
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 16 (1-inch-thick) slices diagonally cut French bread baguette
  • 1/4 c granulated sugar
  • 1/4 c granulated sugar
  • 1/2 c dry white wine
  • 1/2 c fresh strawberry halves
  • 1 c fresh blueberries
  • 1 1/2 c fat-free milk
  • 1 1/2 tsps vanilla extract
  • 3/4 c egg substitute
  • 2 c fresh raspberries
  • 2 c water
  • 1 tbsp powdered sugar
  • 1 tbsp cornstarch
  • 1/4 c butter, divided

Directions
  • Step #1 Combine first 7 ingredients, stirring well with a whisk.
  • Step #2 Arrange the bread slices in a single layer In a large-ish shallow dish.
  • Step #3 Pour milk mixture over bread, & let this stand until milk is absorbed (about 2 mins).
  • Step #4 Melt 2 tbsps butter In a large-ish cast-iron skillet over med-heat/flame.
  • Step #5 Arrange 8 bread slices in pan; cook 3 mins on each side or until bread is golden brown.
  • Step #6 Remove from pan; keep warm.
  • Step #7 Repeat procedure with remaining 2 tbsps butter & 8 bread slices.
  • Step #8 Combine 2 c water, & cornstarch In a large-ish saucepan, wine, 1/4 c granulated sugar, stirring with a whisk.
  • Step #9 Bring to a boil; cook this until reduced to 1 c (about 5 mins).
  • Step #10 Remove pan from heat.
  • Step #11 Add fruit to pan, stirring well to coat.
  • Step #12 Serve sauce with bread slices.
  • Step #13 Sprinkle top each serving with powdered sugar.
