Mini Sour Cream Muffins Recipe

Ingredients
  • 1 c butter or margarine, softened
  • 1 (8-oz) carton sour cream
  • 2 c self-rising flour

Directions
  • Step #1 Combine butter & sour cream; mix at lowish speed of an electric mixer until smooth.
  • Step #2 Add flour, stirring just until mixed.
  • Step #3 Spoon batter into ungreased miniature (1 3/4") muffin pans, using 1 tbsp batter per muffin.
  • Step #4 Bake at 400° for 16 to 18 mins or until golden.
