Parmesan-portobello Grits Recipe

Ingredients
  • 1 tbsp light butter
  • 1/2 tsp salt
  • 1/2 c water
  • 1/2 c (2 oz.) freshly shredded Parmesan cheese
  • 1 c quick-cooking grits, uncooked
  • 2 tsps sliced fresh thyme
  • 1 (32-oz.) container low-sodium fat-free chicken broth
  • 2 garlic cloves, minced
  • 1/4 tsp ground red pepper
  • 1 small sweet onion, finely sliced
  • 2 portobello mushroom caps, cleaned & finely sliced

Directions
  • Step #1 Melt butter In a large-ish nonstick skillet over medium-high heat; add onion.
  • Step #2 Cook, stirring every once in awhile, 8 mins or until golden.
  • Step #3 Stir in mushrooms & next 4 ingredients; cook 5 mins or until mushrooms are tender.
  • Step #4 Remove skillet from heat.
  • Step #5 Bring chicken broth & 1/2 c water to a boil in a medium saucepan; slowly stir in the grits.
  • Step #6 Cover up, reduce heat, stirring every once in awhile, & let simmer, 5 mins or until grits are thickened.
  • Step #7 Stir in portobello mixture & Parmesan cheese.
  • Step #8 Serve as soon as possible.
