Cinnamon Roll Coffee Cakes Recipe

Ingredients
  • 1 1/2 c sliced pecans
  • 5 1/2 c all-purpose flour
  • 1 c butter, melted
  • FILLING:
  • 1/2 tsp vanilla extract
  • 1 1/2 c confectioners' sugar
  • 2 tbsps milk
  • 1 c butter, softened
  • 1 1/3 c warm water (110 degrees to 115 degrees)
  • 1 c warm milk (110 to 115 degrees F)
  • 1 tsp salt
  • 2 (.25 oz) packages active dry yeast
  • 2 eggs, beaten
  • 1/2 c sugar
  • 1/2 c packed brown sugar
  • ICING:
  • 1 tbsp ground cinnamon

Directions
  • Step #1 In a large mixing bowl, dissolve yeast in warm water.
  • Step #2 Add the milk, sugar, eggs, butter, salt & 3 c flour; beat until smooth.
  • Step #3 Stir in enough remaining flour to form a soft dough.
  • Step #4 Turn onto a lightly floured surface; knead until smooth & elastic, about 6-8 mins.
  • Step #5 Place in a greased bowl, turning once to grease top.
  • Step #6 Cover & let rise in a warm place until doubled, about 1 hr.
  • Step #7 Punch dough down; turn onto a floured surface.
  • Step #8 Divide into four portions.
  • Step #9 Roll each portion into a 12-in.
  • Step #10 x 8-in.
  • Step #11 rectangle.
  • Step #12 In a mixing bowl, cream the butter, brown sugar & cinnamon.
  • Step #13 Spread over each rectangle to within 1/2 in.
  • Step #14 of edges.
  • Step #15 Sprinkle top with pecans.
  • Step #16 Roll up each jelly-roll style, starting with a long side; pinch seam to seal.
  • Step #17 Place each roll seam side down in a greased 15-in.
  • Step #18 x 10-in.
  • Step #19 x 1-in.
  • Step #20 baking pan; pinch ends together to form a ring.
  • Step #21 With scissors, cut from an outside edge two-thirds of the way toward center of ring at 1-in.
  • Step #22 intervals.
  • Step #23 Separate strips slightly; twist to allow filling to show, slightly overlapping previous strip.
  • Step #24 Cover & let rise in a warm place until doubled, about 30 mins.
  • Step #25 Bake at 350 degrees F for 20-25 mins or until golden brown.
  • Step #26 Remove from pans to wire racks to cool.
  • Step #27 Combine icing ingredients; drizzle over coffee cakes.
  • Step #28 May be frozen for up to 2 months.
