Pumpkin, Date, And Nut Loaf Recipe

Ingredients
  • 1 tsp baking soda
  • 1 c mashed cooked pumpkin
  •  Vegetable cooking spray
  • 1/4 tsp salt
  • 1/3 c orange juice
  • 1/4 c sliced walnuts, toasted
  • 1/3 c sliced pitted dates
  • 1 egg, lightly beaten
  • 2/3 c firmly packed brown sugar
  • 2 tbsps vegetable oil
  • 1 1/4 tsps pumpkin pie spice
  • 1 3/4 c all-purpose flour

Directions
  • Step #1 Combine first 5 ingredients In a large-ish bowl, & stir well; make a well in center of mixture.
  • Step #2 Combine pumpkin & next 3 ingredients in a bowl; add to dry ingredients.
  • Step #3 Stir just until dry ingredients are moistened.
  • Step #4 Fold in dates & walnuts.
  • Step #5 Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray.
  • Step #6 Bake at 350° for 60 mins or until a wooden pick inserted in center comes out clean.
  • Step #7 Let cool 10 mins in pan on a wire rack; remove this from pan, & let cool completely on wire rack.
