Eggs With Herbs Recipe

Ingredients
  • 1/4 tsp freshly ground black pepper
  • 1 1/2 tbsps unsalted butter
  • 10 eggs
  • 1/2 c sliced mixed fresh herbs (such as parsley & tarragon) & scallions (green parts only)
  • 1 tsp kosher salt
  • 2 tbsps milk or water

Directions
  • Step #1 In a large nonstick skillet, over med-heat/flame, melt the butter.
  • Step #2 In a large bowl, the milk or water, whisk together the eggs, the salt, & the pepper.
  • Step #3 Pour the mixture into the pan & cook, to desired doneness, stirring every once in awhile, 4 to 5 mins.
  • Step #4 Fold the herb & scallion mixture into the cooked eggs.
