Hot Buttered Rum Muffins Recipe

Ingredients
  • 2 tsps baking powder
  • 3 tbsps sugar
  • 1/2 c milk
  • 1/2 c butter, softened
  • 2 large eggs
  • 2 c all-purpose flour
  • 1/2 tsp salt
  • 1/8 tsp ground cloves
  • 5 tbsps rum, divided
  • 1/2 c sugar
  • 1/8 tsp ground nutmeg

Directions
  • Step #1 Beat butter at medium speed with an electric mixer until creamy.
  • Step #2 Add 1/2 c sugar, beating well.
  • Step #3 Add eggs, 1 at a time, beating just until mixed after each addition.
  • Step #4 Combine flour & next 4 ingredients.
  • Step #5 Combine milk & 3 tbsps rum.
  • Step #6 Add flour mixture to butter mixture alternately with milk mixture, beginning & ending with flour mixture; beat at lowish speed until mixed after each addition.
  • Step #7 Spoon into greased muffin pans, filling three-fourths full.
  • Step #8 Bake at 375° for 20 to 25 mins or until golden.
  • Step #9 Remove from pans as soon as possible; place on a wire rack.
  • Step #10 Combine remaining 2 tbsps rum & 3 tbsps sugar in a small saucepan; cook over low heat/flame, stirring constantly, until sugar dissolves.
  • Step #11 Brush over warm muffins.
