Buttermilk-apricot Scones Recipe

Ingredients
  • 1/4 c apricot nectar
  • 1/4 tsp salt
  • 1 egg, lightly beaten
  • 1/2 tsp baking soda
  • 1/4 c sugar
  • 1 egg white, lightly beaten
  • 1/3 c sliced dried apricots
  •  Vegetable cooking spray
  • 1/4 c nonfat buttermilk
  • 1 1/2 tsps baking powder
  • 1 tbsp sugar
  • 2 c all-purpose flour
  • 1/4 c chilled stick margarine, cut into small pieces

Directions
  • Step #1 Combine first 5 ingredients; cut in margarine with a pastry mixer until mixture resembles coarse meal.
  • Step #2 Add apricots; toss well.
  • Step #3 Combine egg, & nectar; add to dry ingredients, buttermilk, stirring just until moistened.
  • Step #4 (Dough will be sticky.
  • Step #5 )Turn dough out onto a lightly floured surface; with floured hands, knead 4 or 5 times.
  • Step #6 Pat dough into a 9-inch circle on a baking sheet coated with cooking spray.
  • Step #7 Cut dough into 12 wedges, cutting to but not through bottom of dough.
  • Step #8 Brush with egg white, & sprinkle with 1 tbsp sugar.
  • Step #9 Bake at 400° for 15 mins or until golden.
  • Step #10 Serve hot.
