Fluffy Buttermilk Biscuits Recipe

Ingredients
  • 1/2 to 1 c self-rising soft wheat flour
  • 1 tbsp butter, melted
  • 1 1/2 c buttermilk
  • 1/4 c butter, chilled & cut into pieces
  • 2 1/4 tsps baking powder
  • 3 1/2 c self-rising soft wheat flour
  • 2 1/4 tsps sugar
  • 1/4 c shortening

Directions
  • Step #1 Combine first 3 ingredients until well mixed.
  • Step #2 Cut in shortening & chilled butter with a pastry mixer or a fork until crumbly.
  • Step #3 Add buttermilk, stirring just until dry ingredients are moistened.
  • Step #4 Turn dough out onto a well-floured surface; sprinkle with 1/2 c self-rising flour.
  • Step #5 Knead 20 to 25 times, adding up to 1/2 c extra flour until dough is smooth & springy to touch.
  • Step #6 Pat dough into a 3/4-inch-thick circle (about 8 1/2 inches round).
  • Step #7 Cut dough with a well-floured 2-inch round cutter, making 12 biscuits.
  • Step #8 Place on ungreased baking sheets.
  • Step #9 Knead remaining dough together 3 or 4 times; repeat procedure, making 6 more biscuits.
  • Step #10 Lightly brush tops with melted butter.
  • Step #11 Bake at 500° for 9 to 11 mins or until golden.
  • Step #12 Note: For testing purposes only, we used White Lily Self-Rising Soft Wheat Flour.
  • Step #13 Rosemary Biscuits: Stir 2 to 3 tsp.
  • Step #14 sliced fresh rosemary into dry ingredients.
  • Step #15 Proceed as directed.
  • Step #16 Parmesan-Pepper Biscuits: Stir 1/2 c (2 oz.
  • Step #17 ) grated Parmesan cheese & 2 tsp.
  • Step #18 coarsely ground pepper into dry ingredients.
  • Step #19 (Less flour will be required while kneading.
  • Step #20 ) Proceed as directed.
