Banana-pecan Pancakes Recipe

Ingredients
  • 1 1/2 c Pancake Mix
  • 1 tbsp vegetable oil
  • 1/4 c toasted sliced pecans
  • 1 1/2 c buttermilk
  • 1 sliced banana
  • 1 tbsp sugar
  • 1 large egg, lightly beaten

Directions
  • Step #1 Combine Pancake Mix & sugar in a medium bowl.
  • Step #2 Whisk together 1 1/2 c buttermilk, egg, & oil; add to dry ingredients, whisking just until lumps disappear.
  • Step #3 Stir in sliced banana & pecans.
  • Step #4 Pour about 1/4 c batter for each pancake onto a hot, lightly greased griddle or large nonstick skillet.
  • Step #5 Cook pancakes 2 mins or until tops are covered with bubbles & edges begin to look cooked; turn & cook 2 more mins or until done.
