Pumpkin Pancakes Recipe

Ingredients
  • 1 large egg yolk
  • 4 large egg whites
  • 1/4 c cake flour
  • 1/4 tsp salt
  •  Cooking spray
  • 1/2 c canned pumpkin
  • 1/4 tsp baking soda
  •  Maple syrup or honey
  • 1/2 c low-fat vanilla yogurt

Directions
  • Step #1 Whisk together pumpkin, baking soda, egg yolk, yogurt, & flour.
  • Step #2 Whisk egg whites with salt; fold into pumpkin mixture.
  • Step #3 Heat a large nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #4 Spoon in 1/3 c batter for each pancake.
  • Step #5 Flip when tops are covered with bubbles & edges are slightly brown (about 3 mins per side).
  • Step #6 Drizzle with syrup or honey.
