Asiago Potato Pancakes Recipe

Ingredients
  • 2 tbsps sliced green onions
  • 1/2 tsp baking soda
  • 1 tbsp minced shallots
  • 1/2 tsp freshly ground black pepper
  • 2 large eggs
  • 1 tbsp all-purpose flour
  • 3 tbsps grated Asiago cheese
  • 2 russet potatoes, baked & thoroughly chilled
  • 3/4 tsp kosher salt
  • 2 tbsps olive oil, plus more as needed

Directions
  • Step #1 Peel & coarsely grate the potatoes.
  • Step #2 Whisk together eggs & next 7 ingredients.
  • Step #3 Stir in potatoes, mixing thoroughly but carefully.
  • Step #4 Heat 2 tbsps olive oil in a nonstick skillet over med-heat/flame.
  • Step #5 Spoon potato mixture into skillet, forming pancakes about 3 inches in diameter.
  • Step #6 Cook 3 to 4 mins, turning once, until golden brown.
  • Step #7 Repeat with remaining potato mixture, adding oil as necessary.
  • Step #8 Keep warm.
