French Market Beignets Recipe

Ingredients
  • 3/4 c evaporated milk
  • 1/4 c sugar
  • 1 tsp salt
  •  Sifted powdered sugar
  • 4 to 4 1/2 c all-purpose flour
  •  Vegetable oil
  • 1 (1/4-oz) envelope active dry yeast
  • 1 c warm water (105° to 115°)
  • 1 large egg, lightly beaten

Directions
  • Step #1 Combine yeast & warm water in a 2-c liquid measuring c; let this stand 5 mins.
  • Step #2 Combine yeast mixture, evaporated milk, & next 3 ingredients.
  • Step #3 Gradually stir in the enough flour to make a soft dough.
  • Step #4 Cover up & chill 8 hrs.
  • Step #5 Turn dough out onto a well-floured surface; knead 5 or 6 times.
  • Step #6 Roll dough into a 15- x 12 1/2-inch rectangle; cut into 2 1/2-inch squares.
  • Step #7 Pour oil to depth of 3 to 4 inches into a Dutch oven; heat to 375°.
  • Step #8 Fry 3 or 4 beignets at a time, 1 min on each side or until golden.
  • Step #9 Drain; sprinkle with powdered sugar.
