Brunch Parfaits Recipe

Ingredients
  • 1/2 c low-fat granola without raisins (such as Kellogg's)
  • 3 c sliced strawberries
  • 2 tbsps slivered almonds, toasted
  • 1/3 c apricot preserves
  • 2 c low-fat vanilla yogurt

Directions
  • Step #1 Place apricot preserves in a medium microwave-safe bowl, & microwave at high for 10 to 15 seconds or until preserves melt.
  • Step #2 Add strawberries, & toss carefully to coat.
  • Step #3 Spoon 1/4 c yogurt into each of 4 parfait glasses; top each serving with 1/3 c strawberry mixture.
  • Step #4 Repeat the layers with the remaining yogurt & strawberry mixture.
  • Step #5 Top each serving with 2 tbsps granola & 1 1/2 tsps almonds.
  • Step #6 Serve as soon as possible.
