Double Coconut Pancakes Recipe

Ingredients
  • 2 tbsps flaked sweetened coconut
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsps sugar
  • 1 large egg, lightly beaten
  • 1 tbsp butter, melted
  • 1 (13.5-oz) can light coconut milk
  • 1 1/2 c all-purpose flour (about 6 3/4 oz)

Directions
  • Step #1 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #2 Combine flour & next 4 ingredients (through salt) In a large-ish bowl.
  • Step #3 Combine coconut milk, butter, & egg; stir well.
  • Step #4 Add coconut milk mixture to flour mixture, stirring until smooth.
  • Step #5 Pour about 1/4 c batter per pancake onto a hot nonstick griddle or nonstick skillet.
  • Step #6 Cook 3 mins or until tops are covered with bubbles & edges look cooked.
  • Step #7 Carefully turn pancakes over; cook 2 mins or until bottoms are lightly browned.
