Low-fat Granola Recipe

Ingredients
  • 1/4 c honey
  • 2 tbsps sliced crystallized ginger
  • 1/2 c dried cranberries or raisins
  • 1 c sliced dried apples, apricots, peaches, pears, or prunes
  • 3/4 c firmly packed brown sugar
  • 1/4 c salad oil
  • 1/2 c unprocessed bran (optional)
  • 2 quarts (2 1/2 lb.) regular rolled oats
  • 2 tsps vanilla

Directions
  • Step #1 Place half the oats, & bran in each of 2 baking pans, sugar, 10 by 15 inches.
  • Step #2 With your hands, crumble sugar & mix ingredients well.
  • Step #3 In a 1- to 2-quart pan over med-heat/flame, stir oil, honey, & vanilla until bubbly.
  • Step #4 Pour half the hot mixture into each baking pan & mix well.
  • Step #5 Bake, uncovered, in a 350° oven.
  • Step #6 After 10 mins, stir granola mixture.
  • Step #7 If using 1 oven, switch pan positions.
  • Step #8 Continue baking until oats are lightly toasted, about 10 mins more.
  • Step #9 Stir in dried fruit, cranberries, & crystallized ginger, breaking up any clumps.
  • Step #10 Bake until oats are crisp, 5 to 10 mins longer.
  • Step #11 Stir.
  • Step #12 Let cool 5 mins & stir again.
  • Step #13 When cool, serve or store this in an airtight container up to 1 month.
  • Step #14 Nutritional analysis per 3/4 c.
