Marinated Melons With Mint And Feta Recipe

Ingredients
  • 1/8 tsp salt
  • 1/2 c orange juice
  • 8 lbs melons such as cantaloupe, orange-fleshed or regular honeydew, and/or watermelon
  • 1/2 c crumbled feta cheese (about 2 oz.)
  • 1/4 c lightly packed fresh mint leaves, rinsed
  • 1/4 c lime juice

Directions
  • Step #1 In a large bowl, lime juice, mix orange juice, & salt.
  • Step #2 Cut melons into quarters, discard seeds, & cut off & discard peel.
  • Step #3 Cut fruit into 1-inch chunks; add to orange juice mixture.
  • Step #4 Cut mint leaves lengthwise into slivers.
  • Step #5 Add to bowl & mix carefully to coat.
  • Step #6 Cover up airtight & chill at least 1 hr or up to 4 hrs.
  • Step #7 Just before serving, mix marinated melons carefully & sprinkle with feta cheese.
