Double Apple Bran Muffins Recipe

Ingredients
  • 1 large egg
  • 2 tsps turbinado sugar (optional)
  • 1 large egg white
  • 1/4 c butter, softened
  • 3/4 c fat-free milk
  • 1/4 c unsweetened applesauce
  • 1/2 tsp ground cinnamon
  • 1 1/2 tsps baking powder
  • 1 tbsp molasses
  • 1 c all-purpose flour (about 4 1/2 oz)
  • 1/2 tsp vanilla extract
  • 1/2 c coarsely sliced, peeled Granny Smith apple
  • 1/2 c packed brown sugar
  • 1 1/2 c oat bran
  • 3/4 tsp salt

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Place 12 paper muffin c liners in muffin c; set aside.
  • Step #3 Combine brown sugar & butter in a medium bowl; beat with a mixer at medium-high speed until light & fluffy (about 5 mins).
  • Step #4 Add egg; beat 1 min or until well mixed.
  • Step #5 Beat in egg white until well mixed.
  • Step #6 Add milk, molasses, applesauce, & vanilla extract; beat on lowish speed until well mixed.
  • Step #7 Lightly spoon flour into a dry measuring c; level with a knife.
  • Step #8 Combine flour, salt, bran, baking powder, & cinnamon In a large-ish bowl; make a well in center of mixture.
  • Step #9 Add milk mixture to flour mixture, stirring just until moist.
  • Step #10 Gently stir in the apples.
  • Step #11 Spoon batter evenly into prepared muffin c.
  • Step #12 Sprinkle top evenly with turbinado sugar, if desired.
  • Step #13 Bake at 400° for 18 mins or until muffins spring back when touched lightly in center.
