Grillades And Grits Recipe

Ingredients
  • 1/2 c sliced celery
  • 4 c hot cooked grits
  • 1 green pepper, sliced
  • 1 small onion, sliced
  • 1/8 tsp ground red pepper
  • 1 1/2 lbs top round steak
  • 3/4 tsp black pepper
  • 1 c water
  • 3 tbsps butter or margarine, melted & divided
  • 3 tbsps all-purpose flour
  • 4 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1 1/2 tsps salt
  • 1 (14.5-oz) can tomatoes, undrained & sliced

Directions
  • Step #1 Pound steak to 1/4-inch thickness with a meat mallet or rolling pin.
  • Step #2 Cut steak into 2-inch squares; set aside.
  • Step #3 Combine flour & next 4 ingredients In a large-ish heavy-duty, zip-top plastic bag.
  • Step #4 Add steak; seal bag, & shake to coat.
  • Step #5 Brown half of steak in 1 tbsp butter in a Dutch oven over medium-high heat about 2 mins on each side.
  • Step #6 Remove from Dutch oven; keep warm.
  • Step #7 Repeat procedure with 1 tbsp butter & remaining steak.
  • Step #8 Remove from Dutch oven.
  • Step #9 Add remaining 1 tbsp butter, onion, & next 3 ingredients to Dutch oven.
  • Step #10 Cook over med-heat/flame, stirring constantly, 5 mins or until vegetables are tender.
  • Step #11 Add tomatoes & water; return steak to Dutch oven.
  • Step #12 Cover up, reduce heat, & let simmer 45 mins, stirring once.
  • Step #13 Spoon grillades over grits, & serve hot.
