Cranberry Crunch Coffee Cake Recipe

Ingredients
  • 2/3 c butter or margarine, softened
  • 1 c sugar
  • 2 c all-purpose flour
  • 1 c firmly packed light brown sugar, divided
  • 1/2 tsp ground nutmeg
  • 1/2 c sliced walnuts
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 c buttermilk
  • 1/2 c egg substitute
  • 1 1/2 tsps ground cinnamon, divided
  • 1 tsp baking powder
  • 1 3/4 c fresh or frozen cranberries, minced

Directions
  • Step #1 Beat butter at medium speed with an electric mixer until creamy; slowly add sugar & 1/2 c brown sugar, beating well.
  • Step #2 Add egg substitute, beating well.
  • Step #3 Combine flour, & next 3 ingredients; add to butter mixture alternately with buttermilk, 1 tsp cinnamon, beginning & ending with flour mixture.
  • Step #4 Mix well after each addition.
  • Step #5 Spoon half of batter into a greased & floured 13- x 9-inch pan.
  • Step #6 Combine remaining 1/2 c brown sugar, nutmeg, & walnuts; sprinkle half of mixture over batter, remaining 1/2 tsp cinnamon, & top this with cranberries.
  • Step #7 Top with remaining batter, & sprinkle with remaining brown sugar mixture.
  • Step #8 Bake at 350° for 35 mins or until a wooden pick inserted in center comes out clean.
  • Step #9 Cut into squares, & serve coffee cake warm.
