- 2 1/2 c low-fat buttermilk
- 2 large egg whites (at about room temp)
- 1 tbsp vegetable oil
- 1 large egg
- 1/2 tsp sugar
- 1 tbsp sugar
- 1 package dry yeast
- 8 oz thinly sliced smoked salmon, cut into 1/4-inch-wide strips
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsps warm water (105° to 115°)
- 1/2 c buckwheat flour
- Dilled Onion Compote
- 1 1/2 c all-purpose flour
- Dash of salt
Directions
- Step #1 Dissolve 1/2 tsp sugar & yeast in warm water In a large-ish bowl; let this stand 5 mins.
- Step #2 Add buttermilk, oil, & egg; stir with a whisk until smooth.
- Step #3 Combine flours, baking soda, baking powder, 1 tbsp sugar, & salt; stir well.
- Step #4 Add to yeast mixture; stir until smooth.
- Step #5 Cover up & chill 8 hrs.
- Step #6 Beat egg whites at high speed of a mixer until stiff peaks form.
- Step #7 Gently fold egg whites into batter.
- Step #8 Spoon about 1 tbsp batter for each pancake onto a hot nonstick griddle or nonstick skillet.
- Step #9 Turn pancakes when tops are covered with bubbles & edges look cooked.
- Step #10 Divide salmon strips evenly among pancakes, & top each with about 1 tsp Dilled Onion Compote.
- Step #11 Garnish with dill sprigs, if desired.
