Feta Omelet With Breadcrumbs Recipe

Ingredients
  • 2 tbsps sliced fresh parsley
  • 4 large egg whites
  • 4 large eggs
  • 3/4 c dry breadcrumbs
  • 1/4 tsp salt
  • 1/4 c thinly sliced green onions
  • 5 tbsps water
  • 1 tbsp sliced fresh or 1 tsp dried oregano
  • 1/2 c (2 oz) crumbled feta cheese
  • 1 tbsp olive oil

Directions
  • Step #1 Preheat broiler.
  • Step #2 Combine first 4 ingredients in a bowl; stir well with a whisk.
  • Step #3 Heat oil in a 9-inch cast-iron skillet over med-heat/flame.
  • Step #4 Add breadcrumbs; cook for 1 min or until lightly browned.
  • Step #5 Spread egg mixture evenly in pan; top this with cheese.
  • Step #6 Broil 15 mins or until omelet is firm.
  • Step #7 Sprinkle top with onions, parsley, & oregano.
  • Step #8 Cut into wedges.
